Full Overview
The name Pilar comes from Ernest Hemingway’s boat, which helped inspire the literary great to pen The Old Man and the Sea.
Flashes of the author’s old stomping grounds — Cuba, the Caribbean and the Keys — fill the dusky two-story space. There’s a jumble of captains’ hats in one corner, netted sacks filled with vintage green-glass buoys in another, and a giant stuffed marlin at the top of the stairwell.
Begin by sampling from mixologist Jonathan Fain’s extensive 31-drink cocktail menu, which showcases oftentimes-daring reinterpretations of the classics, elevated with house-made ingredients, inlcuding bitters and seasonal tonics and vermouth.
If you’re looking for a snack, consider a few of executive chef Justin Bittner’s better-than-bar bites. Scimitars of country bread soaked with olive oil get a layer of tangy goat cheese; the rosemary spiced nut mix boasts walnuts, hazelnuts and Marcona almonds.
Entrees tend to be comforting affairs, like roasted Peruvian chicken with thick-cut yucca fries that pair perfectly with garlic aioli, and buttermilk chicken boastfully cooked in lard.
The check arrives in a cigar box — Hemingway would approve.
