Full Overview

The Caucus Room in the Westin Georgetown has a spicier, sexier cousin. Bóveda, which means “vault” in Spanish, is billed as a “Latin speakeasy” and is intended to be  a more casual, perhaps hipper counterpoint to The Caucus Room, as evidenced by the Latin-inspired menu. The dining room is adorned with on-trend as rustic wood, gorgeous iron globe chandeliers, rough-hewn stone walls and shots of sienna throughout. The seasonal menu, crafted by Caucus Room Chef Brian Wolken, is a mix of Spanish, Latin and American cuisine. The idea is that most of the items are small plates, but even dishes ordered from the “Bites” section of the menu are pretty hefty, making this restaurant a good value. Our favorite from that section is the Gorditas, a flat flour cake mounded with wonderfully crispy pork bits. Two other well-crafted “small” plates (that are also quite large) are the Watermelon and Jicama Salad, a celebration of crunch and assertive seasoning, and the batter-fried Squash Blossoms Stuffed with Huitlacoche, a dish that carefully balances many complex flavors. Three larger items are listed under the “Comida” section, including a spectacularly plated Whole Fish Taco—a head-on snapper that is fried and served perched on its belly, looking as if it were just plucked from the ocean. It’s flanked by a colorful arrangement of red-cabbage slaw, avocado, mango salsa and tortillas.
